CSIC AGRO011- Lactose hydrolysis with immobilized thermoresistant lactase and its obtention method

Spanish public research institution has designed a procedure for the production of the beta-galactosidase from Thermus sp. T2 fused with an IMAC domain consisting in a poly-His tagged in the N-terminal region of the protein, that make possible its purification and immobilization without loosing its thermoresistant hydrolytic power, potentially useful to milk industry simultaneously with thermic treatments. We look for dairy or biomedical enterprises for licence agreement or technical support.

INNOVATIVE ASPECTS

This enzyme is original and there is impossible to obtain it all around the world. The supports for purification and immobilisation are taylor-made. The final reactor allows the hydrolysis of lactose and structural analogues at high temperatures, without loosing activity and transmission of protein to the substrate during hydrolysis, that could be followed during thermal treatments for producing for example, hydrolysed milk.

COMPETITIVE ADVANTAGES

The production of this enzyme is followed in a mesophile micro-organism, avoiding employing the high temperatures required for growing thermophiles and so, reducing production costs. The purity of the obtention allows a great self-life and a selectivity of the reaction, avoiding the off-flavours generated by the commercial beta-galactosidases that are not termoresistant and pure, and that are soluble and so included in the substrate (for example milk) after application.
