A Spanish public research center has a pilot plant optimized for ozone treatment of vegetables as gas or in aqueous solution. This plant allows the research and development of the proper conditions for the application of ozone as gas or in aqueous solution to vegetables as whole or freshly cut products. Ozone is produced in the plant and the process is totally automatic. Companies from the agrofood sector are sought for the development and optimization of their processes.

DESCRIPTION

A research group from a Spanish public research center carries out its work on the research, development and innovation of technologies to enlarge post harvest shelf-life of fresh fruit and vegetables (as a whole or freshly cut) without diminishing their quality.

Ozone (O3) use as sanitizing agent for fruits and vegetables as whole or freshly cut has many advantages compared with the use of hypochloride:

The research group has optimized a pilot plant for the research on the conditions for ozone application as gas or in aqueous solution as sanitizing agent for fruit and vegetables. The equipment allows the determination of the proper conditions for treatment of whole or freshly cut products.

The plant is equipped with an ozone generator from comprised air, with an advanced oxidation device which increases the penetration of the treatment, with a system for dissolution of ozone in water and with a thermic destructor of the spare ozone. It has an analyzer for the ozone generated and the ozone in solution, has a dosage application automaton which includes a time and concentration integrator device and an amperometric probe with a temperature compensatory sensor. The plant includes a tank for the washing of products with ozonised water and a chamber with temperature and relative humidity control for the treatment with ozone gas.

The equipment allows to work at a controlled temperature, it controls the ozone dissolved as well as its effective dosage, ozone is generated in situ and the spare ozone is eliminated, therefore the treatment doesn’t leave residues and it is completely safe for the consumer. The plant is completely controlled without any risk for the operators.

The pilot plant contains all the elements that an industrial plant for the application of ozone treatments to vegetables as gas or in aqueous solution should have.

INNOVATIVE ASPECTS

The technology of ozone use as gas or in aqueous solution for the processing of vegetables as whole or freshly cut allows to join the sanitizing and the antibrowning treatments with the disinfection of the washing water. Therefore it represent an innovative solution for the processing of vegetables. The pilot plant is a fundamental tool for the research, development and innovation in these type of technologies. The use of the pilot plant allows the design and test of the best conditions of treatment for each kind of product.

COMPETITIVE ADVANTAGES

Ozone treatment as sanitizing agent for vegetables as whole or freshly cut allows to avoid the health and environmental problems associated with the use of chloride. The possibility of reusing the washing water represents an important reduction of cost as well as an environmental improvement. This optimized pilot plant allows to adjust the procedure of ozone treatment for each kind of product and is essential for establishing the proper parameters of each treatment. The plant is completely controlled by a computer.
